In Scotland? Id say more like the whole of the UK tbf! I know of (off top of my head) atleast 6 farming operations just in my medium sized town of Telford of the kind you mention, and there not all young people either.

So, what would you people do if you were just coming out of uni? (and aware of peak oil/limits to growth...)

I'd do exactly what you're doing with the addition of getting together a bit of cash.

Learn as much as you can, find somewhere where you feel comfortable and are a valuable resource and settle down and become as self-sufficient as possible.

I think you may find yourself at the end of a rather long queue (purely because of the attractions of a remote rural lifestyle of course). :D

Yep, makes the most sense to me. cash can be hard to come by though these days.
