Welcome to PowerSwitch FarOut11.
I've got Elderberry Elixir on the go but this recipe has the fruit steeped in Vodka, I'll need to sweeten it up but maybe it'll be worth getting a cold for.

Yeah, that's a good way to preserve surplus fruit.

We had loads of surplus blackcurrents last year, so we bunged them in a demijohn and covered with cheap vodka. The marinated blackcurrents can go with ice-cream or be added into muffins. The vodka residue can be drunk, but I find it too sweet unless diluted with something.
