The lady on Monty Don's programme said that char can be made by burning waste in the rainy season, rather than the traditional slash'n'burn approach. The moisture keeps the temperature lower. Given a decent quantity of waste, you can do it in a bonfire environment by just lobbing a load of water on the fire at the right point. The resulting ash is much, much blacker than if you just leave it going.
